    This Chicken Cashew and Broccoli Stir Fry is the perfect easy dinner. Ready in less than 30 minutes and it tastes better than takeout.

    Here’s what you need to make

    chicken and broccoli
    • chicken thighs (boneless skinless)
    • garlic 
    • ginger 
    • onion
    • cornstarch
    • salt 
    • white pepper
    • broccoli (cut into small bite-size pieces)
    • cashews (roasted)

    Stir Fry Sauce:

    • chicken broth (or water)
    • light soy sauce
    • vegetarian oyster sauce
    • honey
    • sesame oil

    How to make Chicken and Broccoli

    It is so easy to whip up this chicken and broccoli stir fry! Here are my step-by-step instructions.

    Prepare the Sauce: 

    • In a small bowl, whisk together the chicken broth, light soy sauce, vegetarian oyster sauce, sesame oil, and honey. Set aside.

    Prepare the chicken and the rest of the ingredients: 

    • Cut the chicken into small bite-size pieces. Add cornstarch, salt and pepper. Mix well and set aside. 
    • Cut the broccoli into small bite-size pieces. 
    • Mince the garlic and the onion. 

    Cook the Chicken: 

    • Heat a large pan or wok over medium-high heat. Add a bit of oil, then add the chicken pieces. 
    • Cook for 7 minutes until the chicken is browned, crispy and cooked through. 
    • Remove the chicken from the pan and set it aside.

    Stir Fry the Aromatics: 

    • In the same pan, add a little more oil if needed. Add the minced garlic and onion. 
    • Stir fry for about 1 minute until fragrant. Remove and set aside.

    Cook the Broccoli: 

    • Add the broccoli to the pan. Add a splash of water and cover with a lid to steam the broccoli.
    • Cook for 2-3 minutes until it starts to become tender but still crisp. 

    Combine and Serve: 

    • Return the chicken, garlic and onions back to the pan.
    • Add the sauce. 
    • Toss everything together, making sure the chicken and broccoli are evenly coated with the sauce. Cook for another 2-3 minutes until the sauce has thickened slightly.

    Garnish and Serve: 

    • Add chili crisp on top for extra flavor. 
    • Sprinkle with green onions on top before serving. Enjoy your Chicken Broccoli Stir Fry over steamed rice or noodles!

    Substitutions

    Chicken Thighs: Substitute with chicken breast, tofu, or shrimp.

    Garlic (minced): Use garlic powder for convenience.

    Ginger (minced): Use fresh ginger or ground ginger.

    Onion: white, red, yellow. Any onion would work for this recipe. 

    Broccoli (cut into small bite-size pieces): Use cauliflower, snap peas, or bell peppers.

    Cashews: peanuts would work for this dish.

    Stir Fry Sauce:

    Chicken Broth: Use vegetable broth or water.

    Light Soy Sauce: Substitute with regular soy sauce or tamari.

    Vegetarian Oyster Sauce: Substitute with regular oyster sauce.

    Honey: Replace with maple syrup or agave nectar.

    Sesame oil: toasted sesame oil would be amazing with this. 

    Cornstarch: Use potato starch to thicken the sauce.

    Storing:

    Refrigerate in an airtight container for up to 3 days. 

    Reheating:

    • To reheat, microwave for 2 minutes or until its warm. 
    • You can also pan-fry it.

    This Chicken Cashew and Broccoli Stir Fry is the perfect easy dinner. Ready in less than 30 minutes and it tastes better than takeout.

    Ingredients

    6 chicken thighs (boneless, skinless, cut into bite-size pieces)

    1 teaspoon cornstarch

    ½ teaspoon salt

    ½ teaspoon white pepper
    1 small onion (diced)

    2 cloves garlic (minced)

    2 cups broccoli (cut into small bite-size pieces)

    2 tablespoon neutral oil

    Stir Fry Sauce:

    ½ cup chicken broth (or water)

    2 tablespoon light soy sauce

    2 tablespoon honey
    1 tablespoon vegetarian oyster sauce

    1 tablespoon sesame oil

    1 teaspoon cornstarch

    Garnish 

    Green onion and chili crisp

    Instructions

    Prepare the Sauce: 

    • In a small bowl, whisk together the chicken broth, light soy sauce, vegetarian oyster sauce, sesame oil, and honey. Set aside.

    Prepare the chicken and the rest of the ingredients: 

    • Cut the chicken into small bite-size pieces. Add cornstarch, salt and pepper. Mix well and set aside. 
    • Cut the broccoli into small bite-size pieces. 
    • Mince the garlic and the onion. 

    Cook the Chicken:
